Glazed Pork Cajun-Style Pepper Sauce and BBQ Sauce Pork
 (a 15 minute, Jamie Oliver recipe!! Quick easy and so flavourful! The rice is incredible)

Halve the recipe if you want to make for two people :)

600g pork fillet

1 heaped tsp ground all spice

500g  rice (I used Uncle bens quick rice that you can microwave)

1 red onion

1 stick of celery

175g okra

2 mixed colour peppers

1 tsp sweet smoked paprika

1 pinch of cumin seeds

1 tsp fennel seeds

1 lemon

1/2 bunch fresh basil

BBQ Sauce

2 cloves of garlic

2tbsp Worcestershire Sauce

4 heaped tbsp tomato ketchup

2 tbsp soy sauce

1 tsp Tobasco

3 tbsp fresh apple juice

To Cook

Score pork and open like a book, flatten and rub with all spice, pepper and salt.  Fry in pan 4 minutes each side.

Chop onion, peppers, celery, okra, add to pan with paprika, cumin, fennel and oil and cup of water, stir regularly.  Add rice, basil and lemon. Cool together till rice is cooked through. 

Make sauce up, cover pork in sauce when crusted, place under grill for 7 minutes, slice, serve and eat.

(Remember if you want only two portions halve everything!!)

Mini pancetta filo pies

Heat the oven to 190C/fan 170C/gas 5. Cook the pancetta in a non-stick pan until it gives up its fat. Add the onions and cook until softened. Cool, then put in a bowl with the eggs and cheese. Season and mix well.
Brush 2 x 12 hole mini-muffin tins with butter. Take 3 or 4 pieces of filo and lay over each other, overlapping to make a star. Brush with butter then push into a hole to make a pastry cup. Repeat until the holes are filled. Divide the egg mix between them and cook for 15-20 minutes until set and golden.
